Tango your way around the kitchen to whip up this delicious mango-infused pav!
1 cup caster sugar
1 teaspoon white vinegar
2 cups thickened cream
2 mangoes, thinly sliced
6 passionfruit, with pulp removed
Preheat oven to 140 degrees Celsius. Line baking tray with non-stick baking paper
Place egg whites in a bowl, using an electric mixer, mix until soft peaks form. Gradually add caster sugar a little at a time, beating well between each addition. Mix until thick and glossy. Fold through with white vinegar
Transfer mixture to the prepared tray and bake for 1 hour 15 minutes. Turn off the oven and allow to cool for 1 – 2 hours. Do not open the oven door until the oven has completely cooled
Whip cream until medium peaks form and spread over the cooled Pavlova. Decorate with mangoes and passionfruit.
